Mince it up!
The step up group at Carrickfergus Cookery School, Carrick YMCA enjoyed making these beefy burritos last week.
They are packed full of flavour, contain healthy vegetables and use low fat mince steak, making them a nutritious and affordable meal for all the family.
1 pack x 8 tortilla wrap
500g lean steak mince
1 red pepper, diced
1 onion, diced
1 red chilli, deseeded and finely chopped
1 clove of garlic, finely chopped
1 heaped teaspoon ground cumin
1 heaped teaspoon paprika
1 dessert spoon tomato puree
50g mature cheddar cheese, grated
1 x pack salad leaves, to serve.
1. Place a large frying pan over a medium heat and add a drizzle of olive oil. Slowly cook the red pepper, chilli, onion and garlic from the beef burrito ingredients until lightly browned and soft. Add the teaspoons of cumin and paprika and stir.
2. Add the beef mince and cook for around 10 minutes until browned. Add the tomato puree and 100g water, and stir.
Cook for a further 2-3 minutes. Remove from the pan to a warm plate.
3. Warm the tortillas one at a time in the pan for 10 seconds each side.
Add a generous spoonful of the beef mix and a sprinkling of grated cheese to each tortilla, and wrap. Serve with salad leaves.
COOKS’ TIP: Serve with fresh guacamole and salsa dips.
